PORK

All Taste Tradition pork is of rare breed origin, typically Gloucester Old Spot, Saddleback, Berkshire, Middle White and Large Black. The extra bit of fat these breeds carry results in a superbly distinctive flavour - the fat both infuses the meat and keeps it moist while cooking. The majority of our breeding stock is outdoors, proving to be more welfare friendly for the pig and in turn means fewer antibiotics are used.

In our experience, Rare Breeds seem extremely well suited to outdoor living unlike their commercial counterparts. The combination of our extensive farming environment, the breed's inherent qualities and carefully monitored natural feed makes for a quality and flavour of pork highly coveted by the discerning meat lover. The sows usually produce two litters (9-11 piglets) per year, and are left to furrow unattended in their own outdoor huts. Piglets suckle on their mother for up to 8-10 weeks before they are weaned and brought indoors until they reach 30kg live weight. After which they are returned to outdoor life and remain until finished. During the winter months however, they may need to spend some time indoors due to severe weather conditions.

Specialist pig rations have been formulated which are free of GM products. Generally none of our pigs are fed adlibitum, so control of feed intake can be closely monitored.
